Spices

Spices and aromatics are the very heart of cooking in any country. Presence of spices in medicines and pharmaceutical preparations makes its importance beyond limits. They have been used since ancient times. Although it was not until the Roman conquests that western counties discovered their culinary possibilities, spices have always been believed to have healing and magical qualities. Spices are filled with flavor and nutrients to dishes without fat or calories. Flowers, leaves, roots, bark, seeds and bulbs (the simplest of natural ingredients) are used in endless combinations to produce an infinite variety of flavors: sweet, sharp, hot, sour, spicy, aromatic, tart, mild, fragrant or pungent. Their tastes and aromas combine to create a kaleidoscope of exotic flavors to delight the plate. It is best to obtain spices in whole seed form and to grind them just prior to use.

Small, dried, reddish-brown flower bud of the tropical evergreen tree of the myrtle family. They have strong, sweet aroma and hot, pungent taste, Cloves are best bought whole and ground, if necessary. They have been used in India for thousands of years, not only in cooking, but to sweeten the breath and to relieve the pain of toothache. They contain a mild anesthetic. Whole cloves are frequently used to flavor meat dishes, curries, and soups.

We also have other African origin Clove as well- Tanzania and Zanzibar and Comoros. We also supply Indonesian Clove through our Associates processing in Indonesia— We supply all grades of Clove from Madagascar – CG3 is the common grade and traded globally. We have Zanzibar Standard Clove and also LALPARI from Indonesia.

Madagascar is the newest producer of Black pepper – the world’s most traded spice. It is one of the most common spices added to world cuisine and its descendants. The spiciness of black pepper is due to the chemical piperine in it. Competitive in quality to Vietnam black pepper, Madagascar black pepper is the lowest priced variety in the world in most time compared to other origins, perhaps.
Black pepper is native to India and are extensively cultivated there and elsewhere in tropical regions and is the worlds one of the most traded spice so much so that it has often been referred to as the “king of spices”. Although South East Asia is the largest producer of black pepper, the black pepper from Madagascar prides in its aristocracy.

Ginger is a flowering plant whose rhizome, ginger root or ginger, is widely used as a spice and a folk medicine. It is a herbaceous perennial which grows annual pseudo stems about one meter tall bearing narrow leaf blades. The inflorescences bear flowers having pale yellow petals with purple edges, and arise directly from the rhizome on separate shoots.
We mainly do dried ginger from Nigeria, which is the major supplier to the world now. We do have Indian dried ginger as well – but expensive compared to Nigerian origin.

Madagascar is the World’s Vanilla capital and is currently responsible for the vast majority of the world’s bourbon vanilla production and about 58% of the world’s total vanilla bean production. The vanilla flower only lasts about one day, sometimes less! – hence it is a labour intensive and labour oriented crop; and it requires, therefore, farmers have to inspect their plantations every day for open flowers on the vanilla plants, a labor-intensive task. Why it is “Bourbon Vanilla” ?

Although vanilla extract is made up of at least 35% alcohol by volume, the “bourbon” in “Bourbon Vanilla” has nothing to do with the alcohol used to make it. Bourbon vanilla is the name for all vanilla grown in Madagascar and other islands in the Indian Ocean, including Comoros and Réunion. Réunion was formerly known as the Île Bourbon, and it is the name of that island that gave Bourbon Vanilla its name.

Vanilla is one of the most important flavors in baking and used both vanilla beans and vanilla extract in the recipes. There are quite a few types of vanilla available – plain old vanilla, Tahitian, Mexican and Madagascar Bourbon Vanilla, etc. Madagascar Bourbon Vanilla is the most common, as Madagascar produces most of the world’s supply of vanilla, and it is often written simply as “Bourbon Vanilla.”

Also known as Black-eyed peas, their names from their characteristic appearance. They are white legumes with a small black dot resembling an eye. These delicious beans are well known in Southern and Southwestern cooking, but the nutrition of the black-eyed bean makes it an excellent addition to any menu.
